Atum selado com musseline de banana da terra e azeite de coentro
Ingredientes: Atum 300g de atum fresco 1 colher de sopa de azeite extra virgem Sal marinho e pimenta do reino 100g de mix de gergelim preto e branco
Musseline 1/2 banana da terra madura 200ml de leite de coco 1 colher de chá de cúrcuma em pó 1 colher de sopa de gengibre fresco ralado Pitada de sal
Azeite de coentro 1 maço de coentro (somente as folhas) 1/2 xícara de azeite extra Virgem Pitada de sal e pimenta do reino Opcional pedacinho de alho sem o miolo
Modo de preparo: Azeite de coentro: coloque todos os ingredientes em um liquidificador e bata bem até obter um azeite verde.
Musseline: coloque todos os ingredientes em um liquidificador e bata bem até obter um creme liso e homogêneo. Prove e ajuste os sabores.
Atum: tempere o atum com azeite, sal e pimenta. Depois passe no gergelim em todos os lados. Aqueça uma frigideira e assim que estiver bem quente, sele por 1 minuto de cada lado, fazendo isso em todos os lados. Retire e fatie.
